Bear who?

I've been called so many things along the years but only one sticks. The Bear.
I don't particulary remember who started it nor why but I kinda like it. I like to sleep in the winter and I used to binge on dairy products and honey. I don't shave my legs in the winter and I certainly growl when I sleep... I guess I do meet the female bear criteria.

Well for the past few years this bear has been obsessed about food. Eating, burning, creating, making etc. You name it I've done it. Here I would like to share my thoughts, maybe even recipes (I highly doubt it). It's not about introducing my self to the world wide web but it's more about getting these thoughts out of my head before I explode.

Let's start.
It's almost the end of October which means Halloween time! I love this time of year, weather is still kinda warm, the trees turn orangy and the return of root veggies! I never love roots until I moved to Scotland where turnips, carrots and potatoes rock the local farmers market. I love them boiled with butter, roasted with honey and mashed with cream. Yummy..

I've spent the last few weeks imagining what I would do with my fav root vegetables.
Today's obsession is sweet potatoes. I spent my whole lunch googling on ideas....
what to do, what to make....

So I've decided to make the easiest sweet potato recipe I could think of. Mashed Sweet Potatoes with honey. It's damn easy, filling and definitely calorific (if you're on a diet - well, what can you do). As an Indonesian I grew up loving sweet potatoes, not as a staple food but more as a snack. My mum would buy sweet potatoes and steam or boil them for us, sounds simple but believe me it's delicious. Especially when you have with a sweet, warm jasmine tree.

Anyhoo, to do this dish you need (of course) sweet potatoes, onions, salt, pepper, honey and cream (double cream if you like it extra creamy)

Serves 2
Ingredients:
2 Medium size sweet potatoes, peeled and cut in smaller pieces
A pinch of salt
A pinch of black pepper
2 tbs of runny honey (or anyking of honey)
200 ml of single cream
1 onion, diced.
  • Boil the sweet potatoes in salt water until soft (not just soft boiled type but actually soft or even slightly over boiled, just to make it easier for you to mash it).
  • Saute the diced onion with a bit of olive oil till it's golden brown, don't over do it as you don't want the onion to over take the flavour.
  • Once the potatoes are boiled, drain the water and add the sauted onion, cream and honey. Mash them all together.
  • Add salt and pepper (keep tasting it till you reach the point where you think - hmm, that's delicious!)
  • Serve warm

The great thing about this dish is that any left over can be turned into soup. Just add stock and voila, a delicious-under-ten-minutes sweet potatoes soup!

This winter bear surely loves her sweet potatoes
